    South Indian ritual at the centre. Filter decoction, brass, jaggery — the things our grandmothers measured by feel.

    Malleshwaram pace. Conversation over consumption. A second cup on the house when the rain starts.

    Neera honey, palm jaggery, fresh ginger and elaichi. Sweet enough, never too much.

    Standardised masala mix, decoction held warm, leaves measured to the gram. Slow is part of the recipe.

The ritual

Four steps to a Malleshwaram cup.

  1. Boil

    ಕುದಿಸಿ

    Water just off rolling. Crushed elaichi, fresh ginger, a stick of dalchini if it's a chilly evening.

  2. Steep

    ನೆನೆಸಿ

    Loose Assam–Nilgiri blend, weighed to the gram. Four minutes. We watch the clock, not the timer.

  3. Sweeten

    ಸಿಹಿಗೊಳಿಸಿ

    Palm-flower neera or jaggery — never refined sugar in our signatures. Sweet enough, never loud.

  4. Pour

    ಸುರಿಯಿರಿ

    Steel tumbler, eyes-down decanter pour. Served with a small biscuit and a longer hello.
